Apparently their mother Queen Mary was so moved by her sons guarding the coffin of their father, that they started this tradition from that time on. Wikipedia explains: "The Vigil of the Princes refers to occasions when members of the British royal family have "stood, guard" during the lying in state of one of their relatives during or as part of a British state or ceremonial funeral. This occurred for King George V in 1936, Queen Elizabeth The Queen Mother in 2002, and three times for Queen Elizabeth II in 2022".
Edit: Wikipedia explains the reason why King Edward VIII took the decission to guard his father's coffin with his than living brothers: "At the procession to George's lying in state in Westminster Hall, the cross surmounting the Imperial State Crown atop George's coffin fell off and landed in the gutter as the cortège turned into New Palace Yard. The new king, George's eldest son Edward, saw it fall and wondered whether it was a bad omen for his new reign. As a mark of respect to their father, George's four surviving sons – Edward, Albert, Henry, and George – mounted the guard, known as the Vigil of the Princes, at the catafalque on the night before the funeral."
